I was struck by the vibrant flavors in my salad this morning. My breakfast included tomatoes, English cucumber, celery, and a mild black bean salsa, all fresh. I tossed it with a bit of lemon juice. The result was both simple and mouth-wateringly magnificent.
I am blessed to live in a world with fresh vegetables. I am doubly blessed to live just over a mile from a store where I can buy fresh vegetables. I am triply blessed to be able to afford fresh food.
